Oklahoma nut candy
Ingredients
6 cups of divided sugar
2 cups of heavy cream
Half a cup of unsalted butter
Half a teaspoon of baking soda
1 teaspoon vanilla
1 1/2 cups chopped walnuts or pecans
Methods
Grease a 9" x 13" baking dish and set aside.
In a small saucepan (with a heavy bottom if you have it!), pour in 2 cups of sugar and cook over moderate heat, stirring often. cook until sugar is completely dissolved, about 20 minutes.
When the sugar has softened, add the remaining 4 cups of sugar and the heavy cream to a large saucepan (or Dutch oven, you want a big pot here!). Simmer until sugar dissolves in the small saucepan. Add the dissolved sugar to a large saucepan, stirring constantly.
Increase heat to medium and cook mixture to 244°F or soft ball stage.
Remove from heat and stir in the baking soda until completely mixed.
Add butter and vanilla. Stir until the butter melts and the mixture becomes smooth.
Let it rest for 20 minutes.
After the mixture has rested, stir in the nuts and mix until the gloss is gone. Transfering to prepared baking dish.
Leave to cool 1 to 2 hours or overnight. Cut into small squares for serving.
