Italian cake
Ingredients:
500g mascarpone cheese
Cocoa sufficiently pure
24-30 Italian croquettes
3 strong cold coffee
3 tsp dark rum
2 egg yolks
2 egg white
1/2 c sugar
Preparation:
Mix coffee and rum
In a bowl, beat the egg whites until firm with an electric mixer. Set aside
In another bowl, combine the egg yolks, sugar and mascarpone until well blended. Stir in the egg whites
In the bottom of a 9-inch springform pan, sprinkle with cocoa powder to cover the bottom with a small sieve
Quickly dip the lady’s fingers one at a time in the coffee mixture and place in the bottom of the pan to cover
Then spread 1/3 of the cheese filling, sprinkle again with cocoa powder and repeat the other 2 layers with the soaked cookies, cheese and cocoa
Cool and serve
