Baked Sweet and Sour Chicken

Ingredients

4 skinless boneless chicken breasts, cut into 1
1 cup cornstarch
2 large eggs
1/4 cup vegetable oil
1/2 cup granulated sugar
1/4 cup ketchup
1/2 cup apple cider vinegar
2 tablespoons soy sauce
1 tsp garlic powder
1/2 tsp sea salt

Directions

Preheat the oven to 325F and line a 13 x 9-inch baking pan with parchment paper.
Set aside. Seasoning chicken breasts with salt also pepper.
Add the cornstarch to a large Ziploc bag and add the chicken breast. Shake to coat.
In a shallow bowl, beat the eggs together. Heat the oil in a skillet over medium-high heat until they sizzle.
Dip chicken breasts in eggs and add to skillet. Sear the chicken until golden brown and place in the prepared pan.
In a medium bowl, combine the sugar, ketchup, vinegar, soy sauce, garlic powder, and sea salt, and whisk.
Pour over the chicken and bake for 1 hour, stirring halfway.
Serve with rice.
