CREAMY GARLIC SHRIMP
Ingredients
- 1 tablespoon olive oil
- 1 pound (500 grams) shrimp, tails or outside
- Salt and pepper to taste2 tablespoons unsalted butter

- 1/2 cup dry white wine or chicken broth
- 1 1/2 cups low-fat cream
- 1 1/2 cups low-fat cream**
- 1/2 c fresh Parmesan cheese
- 2 tsp fresh chopped parsley
Methods
Heat a large frying pan with oil over medium to high heat. Season the shrimp with salt and pepper and fry for 1-2 minutes on each side, until fully cooked and pink. Transfer to a bowl and set aside.
Melt butter in the same skillet. Fry the garlic until fragrant (about 30 seconds). Pour white wine or broth. Allow it to halve while scraping any bits from the bottom of the pan.
Reduce heat to low-medium, add cream, and simmer, stirring occasionally. Seasoning with salt also pepper to your taste.
Add the Parmesan cheese and let the sauce simmer gently for another minute or so until the cheese has melted and the sauce has thickened.
Add the shrimp back to the skillet and sprinkle with parsley. Taste the test sauce and adjust salt and pepper if necessary.
Serve over pasta, rice, or steamed vegetables.
