Grandmas Apple Cake

Shortly after I arrived in Florida, my cousins husband gave me a recipe that was his Grandmothers, and after making it, I came to the same conclusion he had...it's one of the best apple cakes I have ever eaten. This morning there was a request to make it again and I was happy to do just that. I love watching my Grandsons eat and I told them that this was their Great Grandmas recipe and that I had included it in my last cookbook so they could pass it down to their children one day. I had a little chuckle when my youngest looked up and said "does this mean I don't have to remember it?" They are such a hoot.
3 large eggs
1 3/4 C. sugar
1 C. vegetable oil
2 C. all purpose flour
1 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
5 apples, peeled and chopped
1 C. finely chopped pecans
powdered sugar
In a mixer, beat together the eggs, sugar and oil for 5 minutes. Add the flour, soda, salt and cinnamon. Beat till well combined. Stir in the apples and pecans. The batter will be very thick. Pour into a prepared (greased) 9x13 baking pan. Bake in a 350 degree oven for 1 hour. Allow to cool and dust with powdered sugar before serving.
